  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat 1/4 cup dressing in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until done. Add vegetables and parsley; cook 5 min. or until vegetables are tender, stirring occasionally.
  • Drain pasta; toss with chicken mixture and remaining dressing. Top with cheese.

Substitute uncooked deveined peeled shrimp for the chicken, reducing the cooking time to 2 min. or until shrimp turn pink before adding the vegetables and parsley.

Rated 5 out of 5 by from We make this at least once a week! We make this at least once a week! I've made this about 50+ times!!! I make my dressing in the food processor. Then I marinate the chicken for about 4 hours. I roast pine nuts for this also. DELICIOUS! I also keep fresh farmers market peppers, red, yellow, and green frozen to just pour in with the sauteed onions for this. I also pre chop in the food processor fresh cliantro and put in little blocks to freeze. I plop in 3 to 4 blocks to brighten the flavor... WOW! I also use the fresh salad dressing to add 1.5 cup more for the sauce... add just a ladel of pasta water for the right consistency. I boil the brocoli with the pasta, whole wheat... and VOILA! My 2.5 yr old LOVES this, I squeeze fresh lemon juice on hers... and my one year old always has seconds! Thank you for this great recipe!!!!!

Rated 5 out of 5 by from I made this with broccoli and baby carrots. I made this with broccoli and baby carrots. I omitted the red pepper and onion as I do not like. I also I did not use the parsley as I had none on hand. I used penne pasta instead too. Used type of Italian dressing I had on hand. Also used boneless chicken fingers as they cook faster and are easier to make into bite size pieces. Will definitely make again! So easy and like the ease of incorporating fresh veggies. Think it will be great as a cold salad tomorrow for lunch!

Rated 4 out of 5 by from Very healthy recipe, and a minimum of work. Very healthy recipe, and a minimum of work. I modified this to serve 2 hungry adults. Used 5 oz. of rotini pasta, all the required veggies, about 1/2 cup of Light Done Right Zesty Italian dressing, and 5 oz. of pre-cooked deli chicken breast. It only needed a healthy sprinkle of black pepper. (Do be careful not to use too much Italian dressing, or it will taste too much like a hot salad. I almost overdid it.) We really enjoyed this combo of ingredients!!!

Rated 5 out of 5 by from I made this recipe again tonight, but changed a few things. I made this recipe again tonight, but changed a few things. I didn't cook the chicken in the dressing, I cooked it in about a tablespoon of vegetable oil then added some italian seasoning, garlic, salt and pepper. Then used Kraft Italian Pesto dressing instead of the house italian dressing. It was even better than the last few times I've made it. Definately one of my family's favorites!

I seasoned the chicken with salt and pepper before cooking and used a Lite Caesar instead of Italian dressing (it's what I had on hand). I used dried parsley because I didn't have fresh. I didn't find it bland at all, I think becuse of the Caesar dressing which is a little more robust than Italian usually is when you cook with it. I'd make it again.

I made a carafe of Good Seasons Italian dressing and used that instead of the light dressing so it probably wasn't as healthy as the original recipe. I used half of a package of penne pasta and 3 chicken breasts. I will definitely make this recipe again! P.S. - There was enough left for the 2 of us to have it again tomorrow night.

I used a Robusto Italian dressing and think I will use a little more next time. After cooking it and finding it a little bland, I added some crushed red peppers, which did improve it. I liked a lot of the variations here though and was thinking of working my own magic on this one next time!!

Rated 5 out of 5 by from i have made this recipe twice... i have made this recipe twice... 1st time i used everything it called for except the dressing ... used regular italian & i used spiral pasta... 2nd time.. i added portebello mushrooms, roma tomatoes, & purple onion along with the rest of the fresh veggies... it was excellent. my family requests this dish on a regular basis. simple, fresh, and filling!
