Zesty Corn Salad

So fresh tasting -- probably the cilantro. I added some black beans as suggested by one of the reviewers. Also, used an Anaheim chili pepper and salsa instead of the jalapenos.

I've made this recipe dozens of times for family, friends and coworkers and everyone always LOVES IT. I don't always add all the recommended jalapenos b/c that can get a little too spicy. A coworker informed me that she added black beans to the recipe to add in fiber & protein, so I tried it too and thought it was good.

The cilantro really made this dish excellent. I needed a dish to pass when camping with friends so I made it a day ahead. The flavors had time to infuse. I did not add the jalapenos because I didn't know the others hot tolerance was and I'm glad I didn't. It was perfect without them.

A little on the strong side

I've made this recipe several times and everyone loved it! It's very inexpensive to make and tastes good.

I used red peppers instead of green (for color) and substituted two poblano peppers for the 6 jalapenos. Everyone loved this salad! It is very easy and inexpensive to make.

easy to make and a crowd pleaser

I made this for a mexican food potluck our family was having. It travels well. I cut the jalapenos down to 1, six is just TOO MANY. I used red and orange bell peppers and served it in a clear glass bowl.It was so good that I didn;t even get any at the dinner. I'll definatly make this again. Good contrast to all the heavy/spicy foods .
