I cut the jalapenos down to 1, six is just TOO MANY. I used red and orange bell peppers and served it in a clear glass bowl.It was so good that I didn;t even get any at the dinner. I'll definatly make this again. Good contrast to all the heavy/spicy foods .

I've made this recipe dozens of times for family, friends and coworkers and everyone always LOVES IT. I don't always add all the recommended jalapenos b/c that can get a little too spicy. A coworker informed me that she added black beans to the recipe to add in fiber & protein, so I tried it too and thought it was good.

Rated 5 out of 5 by from The cilantro really made this dish excellent. The cilantro really made this dish excellent. I needed a dish to pass when camping with friends so I made it a day ahead. The flavors had time to infuse. I did not add the jalapenos because I didn't know the others hot tolerance was and I'm glad I didn't. It was perfect without them.

Of course you have to watch and alter the amount of Jalapeno peppers you use based on their size and your preference. I also added a little chopped red pepper for color. This is a keeper recipe. :-)
