Stir in 2 Tbsp. chopped fresh herbs, such as parsley, chives, tarragon or basil, before chilling.

This is a wonderfully easy and very tasty potato salad. I've made it several times this summer. I love being able to put it together an hour before dinner.
I took this recipe to three picnics. It was the hit all the picnics! Easy and quick to make. We love it.
