  • Toss all ingredients except dressing in large bowl. Add dressing; mix lightly. Cover.
  • Refrigerate several hours or until chilled.

Storing Asparagus

To store asparagus, stand fresh spears upright in a container filled with about 1 inch of water. Cover loosely with a plastic bag and refrigerate. Or, store in refrigerator with a damp paper towel wrapped around base of stalks and cover loosely with a plastic bag. Asparagus is best when cooked the day it is purchased, but will keep up to 3 or 4 days. Wash just before using.

How to Blanch Vegetables

Cook vegetables briefly in boiling water and then plunge into ice water to cool; drain.

Rated 3 out of 5 by from I think this recipe is good and zesty, but it would be much better with a few alterations. I think this recipe is good and zesty, but it would be much better with a few alterations. First, prepare with a wild rice blend that already has a spice package with it. Second, I would prefer a different vegetable instead of asparagus in this salad because I serve steamed asparagus as a side with the lemon dill fish which is the complementary suggested recipe for the mealtime planner. So I would probably use frozen green peas in the salad next time. Third, I see no reason why bottled Italian dressing cannot be used. Fourth, shrimp is unnecessary and expensive for a side dish.

The main ingredients are the rice and the salad dressing. I've made this three more times to rave reviews using broccoli, celery, chopped tomatoes, whatever is handy. So many people have asked for the recipe...it's that good.

I used peas instead of the asparagus, tuna instead of the shrimp and red wine vinaigrette instead of the italian salad dressing and I added salt & pepper. It was very zesty. I served it in mini pita bread.
