Zesty Shrimp and Vegetable Kabobs

  • Thread shrimp and vegetables onto 24 wooden skewers; place in shallow dish. Mix dressing, cilantro, 2 tsp. lime zest and 1/2 tsp. ground red pepper until blended. Pour over kabobs; turn to evenly coat kabobs. Refrigerate 1 hour to marinate.
  • Heat greased grill to medium-high heat. Remove kabobs from marinade; discard marinade. Grill kabobs 6 to 8 min. or until shrimp turn pink, turning after 4 min. Meanwhile, mix mayo, garlic, lime juice, remaining zest and remaining ground red pepper.
  • Serve kabobs with mayo mixture.


Prepare using KRAFT Lite House Italian Dressing and KRAFT Light Mayo Reduced Fat Mayonnaise.


Substitute 2 lb. boneless skinless chicken breasts, cut into 1-inch chunks, for the shrimp. Grill or broil 8 min. or until chicken is done and vegetables are crisp-tender.

Use Your Broiler

To broil the kabobs instead of grilling them, place the drained marinated kabobs on rack of broiler pan. Broil, 6 inches from heat, 8 min. or until shrimp turn pink, turning after 4 min.

Rated 5 out of 5 by from This is the BEST kabob recipe ever! This is the BEST kabob recipe ever! The marinade is soooooo delicious!!! A hint of lime, a hint of spice...excellent! I did a mixture of shrimp, chicken and vegetables. I suggest you marinade it in ziplocks instead of just simply pouring it over the skeweers. I made a bag of shrimp, a bag of vegetables, and a bag of cut up chicken breasts and then divided the marinade between the three. I then put then on the skewers after marinading. A bit messy.......but worth the extra flavor!! Will definitly make again, and my friends loved it!! I made tons and hardly any left over!!!

Rated 4 out of 5 by from Very flavorful. Very flavorful. I improvised a bit, since I was also making the Ultimate Grilled Steak, by adding the A1 sauce called for in the steak recipe to this marinade. I also basted the kabobs and steaks with the A1 sauce during grilling. Definitely a repeat meal!
