Zippy Orange Chicken and Rice

This colorful, zesty entrée of chicken strips, green pepper, rice, mandarin oranges and pineapple is flavored with orange juice and brown sugar.

What You Need

1/2

cup MIRACLE WHIP Light Dressing, divided

boneless skinless chicken breast halves (about 1-1/4 lb.), cut into strips

green pepper, cut into strips

cup orange juice

Tbsp. brown sugar

1-1/2

cups instant white rice, uncooked

can (11 oz.) mandarin oranges, drained, or 1 orange, peeled, sectioned

can (8 oz.) pineapple chunks, drained

Make It

HEAT 2 Tbsp. of the dressing in skillet on medium-high heat. Add chicken and green pepper; cook and stir 5 minutes or until chicken is cooked through. Drain. Reduce heat to medium.

MIX remaining dressing, juice and sugar. Stir into skillet; bring to boil.

REMOVE from heat; add rice, orange segments and pineapple. Let stand, covered, 5 minutes.

This was pretty easy to make and really good but I think it could use some spices like garlic and red pepper flake. Just a little on the bland side.

Used brown rice, cooked separately with the juices before adding in with the meat and veggies. Used stir-fry veggies instead of just green pepper. Very good, but on the sweet side.

I just made this today and to my surprise it was quite delicious. I was expecting it to be light in flavor but I like that it was actually a good amount of sweet citrus flavor. I used brown rice and I let the rice boil with the food for about 4 minutes before letting it stand to make sure the rice would be soft. I will definitely make this again.

This is gross. It's not even close to tasting like orange chicken.

It was GREAT! My picky husband not only had seconds, but thirds of it! It was easy to prepare and it didn't take much time at all! We will definitely be eating this meal again!

Very sweet. I was expecting more of a Chinese Orange Chicken glaze, but it was more like a citris rice and chicken soup. I don't know if we did something wrong with the rice or what, but it just didn't work out well for us. I don't think I'll be making this one again.
