  • Heat oven to 375°F.
  • Cut zucchini lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells. Place shells in 9-inch square baking dish. Chop zucchini pulp.
  • Mix Neuchatel, milk and seasonings until blended. Add zucchini pulp, peppers and onions; mix well. Spoon into zucchini shells; sprinkle with nuts.
  • Bake 35 min. or until heated through and tops are lightly browned.
