  • Cook onions in large nonstick ovenproof skillet on medium heat 3 to 4 min. or until crisp-tender. Stir in corn and peppers; cover. Cook 5 to 6 min. or until corn is tender, stirring frequently.
  • Mix flour and milk until blended. Add to corn mixture; mix well. Cook 4 to 5 min. or until thickened, stirring frequently. Add zucchini; mix well. Top with cheese.
  • Heat broiler. Broil vegetable mixture 3 to 4 min. or until cheese is melted.

Just because it's cheesy doesn't qualify this dish as a gratin. The flour/milk mixture did nothing for the recipe, it just clumped. I would recommend cooking the jalepeno with the onion, maybe in some butter. Adding the zucchini at the end was not enough time to have it cook properly, even with the broiling. Adding it earlier would likely overcook it. I won't be attempting this again, it was that unappetizing.

Like the other reviewers, my flour and milk clumped, so added water to a desired consistency. Decided not to broil, just covered the pan after adding the zucchini and cheese until the cheese melted. The zucchini was tender and everyone loved the final product.

I had high hopes for this recipe but I was disappointed with how mine turned out as well. Just like one of the other reviewers, the flour/milk mixture clumped immediately and there wasn't enough time to cook the zucchini properly even with the broiling.
