I love this recipe with a few embellishments. I cooked the onion in a bit of butter and add in a carrot sliced into very thin long strips (use you peeler).
I cook until tender, then add frozen corn. Add the milk and flour ( I also added a bit of water). Add about 3 tablespoons of ***** cheese and a quarter cup of parmesan cheese, and a teaspoon of red pepper flakes (instead of the jalapeno). Add the zucchini and cook until tender and everything is creamy and mixed well. Turn off the heat, throw in a handful of small cherry tomatoes, mix gently. Top with a sprinkling of shredded cheese mixture and cover until the cheese is melted. No need to put in the oven. Comes out pretty and colorful with the added carrot and tomato.
This was fine, easy enough to make and tasted fine. Nothing special that I'll probably make again.
