Mix first 5 ingredients together. Add water, oil, vanilla, and eggs to dry ingredients one at a time and mix well. Carefully add diced banana so that you don't accidently mash them.
Pour batter into a greased angel food pan or if you rather 2 loaf pans. Bake 1 hour and 15 minutes or until toothpick inserted comes out clean.
