Original recipe yields 1 serving
Cream Cheese Filling
1 package (3-ounce) cream cheese, softened
1 tablespoon sugar
1 tablespoon milk
1 cup sugar
1 cup canned pumpkin
1/3 cup vegetable oil
1 teaspoon vanilla
2 eggs
1 1/2 cups all-purpose flour
1/2 cup coarsely chopped walnuts or pecans
2 teaspoon s baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground cloves

Preheat oven to 350 degrees F. Grease bottoms only of 12 muffin cups or line with paper baking cups.

For the cream cheese filling: mix all ingredients until smooth. Set aside.

For the muffins: Mix sugar, pumpkin, oil, vanilla and eggs in a large bowl. Stir in remaining ingredients.

Fill muffin cups 1/3 full. Place about 1 rounded teaspoon filling of batter in each muffin cup. Top with remaining batter.

Bake 20-22 minutes, or until golden brown. Immediately remove from pan.
