Butter well the sides and bottom of a springform pan. Roll the graham crackers around the sides of pan, and put the remainder of crumbs on the bottom of pan.
Beat egg whites and 1 cup of sugar. Blend this with the cream cheese. Add vanilla. Pour mixture into the pan over the crumbs. Bake for 25 minutes in 350°F oven (Don't overbake).
Mix 2 Tbsp. of sugar with sour cream. Spread this mixture over the top of the baked mixture and return to 475°F oven for 5 minutes. Remove from oven and allow to cool well (about 1 hour). Then place in refrigerator for at least 2 hours.
