Peel shrimp and marinate with chopped ginger, garlic and sherry or white wine. Cover in a bowl.
Cut portebello mushroom in 1/2 and then slice.
Heat 2 Tbsp. oil in wok over med heat. Add matchstick ginger, sliced garlic and red onion and cook for several min.
Add mushrooms and broccoli, raise heat to med high and add shrimp. Cook quickly till pink. Add 1/2 cup white wine. Cook for about 1 or 2 minutes and serve with white rice.
