Original recipe yields 1 serving
3 egg yolks
1 Tbsp water
1 Tbsp lemon juice
Pinch salt
Pinch cayenne pepper
1/2 cup butter

Let's Make It

Mix yolks, water, juice, salt and pepper and put in Pyrex bowl (small).

Bring water to near boiling in small pan that the Pyrex will fit into the water and stand proud of pan. Stir constantly till starts to thicken.

Add butter by 1/3" slice at a time till all melted and looking thick.
