Slowly boil 1st 6 ingredients for 3 minutes on medium heat. Cool (I put in freezer for about 20 minutes).
Mix coleslaw mix, onion, pepper, and cucumber.
Pour dressing over slaw mixture. Refrigerate. Much better the next day!
