In a medium bowl, mix soy sauce, 1 Tbsp. light olive oil, garlic, and ginger. Add beef (or chicken) strips and toss well to coat. Cover, marinate 30-60 minutes. Prepare spaghetti using package directions (use full amount of water recommended), drain.
In a large skillet, wok, or stir-fry pan heat 1 1/2 Tbsp. light olive oil on medium high heat. Add beef mixture and broccoli; stir-fry 2 minutes. Add onion, pepper strips and mushrooms. Stir-fry until vegetables are crisp-tender.
Mix water, cornstarch, and seasoning mix. Stir into beef mixture. Cook until thickened and translucent, keep warm. Add spaghetti to beef mixture and toss to mix. Serve directly from wok or stir-fry pan.
