Preheat oven to 325 degrees F. First peel and dice apples set aside. Then in a medium size bowl mix dry ingredients well. Then add vanilla, oil, and eggs. Finally add fruit and nuts.
Place mixture in 13x9" pan.
Bake for about an hour. Allow to cool at least 15 to 30 minutes before serving.
