Original recipe yields 1 serving
8 ounces fettuccine
1/4 cup olive oil
3-4 large garlic cloves, minced
2 cans plum tomatoes, chopped or canned diced tomatoes (16 oz.)
1/2 cup Madira, Vermouth or White Cooking Wine
1/4 cup RealLemon lemon juice
1/2 tsp sugar
4 scallions, chopped
1 lb shrimp, peeled, rinsed, patted dry
4 Tbsp fresh chopped basil or 1 Tbsp. dried basil
4 Tbsp parmesan cheese

1. Cook fettuccine 8 minutes, drain well & keep warm.

2. Saute garlic in olive oil in large skillet over medium; heat 2 minutes. Add tomatoes, cook 5 minutes longer.

3. Pour in Madira, add lemon juice & sugar. Simmer 6 minutes.

4. Add scallions & shrimp. Cook until shrimp turns pink and are cooked through, about 3-4 minutes.

5. Stir in basil and parmesan cheese.

6. Toss with cooked fettuccine, serve immediately.
