1 lb jack cheese, grated
1 lb cheddar cheese, grated
3 eggs, beaten
3 tablespoons flour
1 can (5 ounce) evaporated milk
1 can (15 ounce) tomato sauce or diced tomatoes

Let's Make It
Wash chiles and remove seeds. In 9x13 pan layer half chiles and half cheese. Repeat but save 1/2 cup cheddar.
Beat eggs. Add flour and milk. Beat until blended. Pour over chiles and cheese. May refrigerate.
Bake at 350°F for 30 minutes. Spread tomato sauce over top and sprinkle remaining cheese. Bake 10-15 minutes longer.
