Peel and cube potatoes in bite size chunks into a large pot. Add onion, carrots, celery, broth, 1 broth can of water, and seasonings. Bring to a boil, and cook until tender.
Mash vegetables to desired texture - I like mine pretty chunky, but some prefer a pretty well 'blended' soup. Add Velveeta and milk, heat through and serve.
