Dice carrots, celery, pepper and onion. Cook in the butter until tender. Stir in 1 can of chicken broth and cheese. Cook over medium heat until cheese is melted.
In the blender, blend cheese mixture until smooth. Return to saucepan, stir in remaining broth and milk.
Heat and serve. I pour it over chunks of Cuban bread.
