1-1/2 large purple onion, sliced to 1/4 inch thick
1-1/2 green bell pepper, sliced
1 package fresh mushrooms, sliced or halved
6 chicken thighs or breasts
3 cans (10.75 ounce each) condensed cream of mushroom soup

Preheat oven to 350°F. Spray a 9 x 13-inch baking dish or pan with cooking spray.
Next, layer in the following order: onion, bell pepper, sliced mushrooms and chicken. Pour soup over the top. Cover with aluminum foil.
Bake for 45 minutes. Remove foil and bake an additional 15 minutes.
