Cut squash in 1/2, clean out strings and seeds. Place each 1/2 upside down on microwave safe plate, cook 10 min. Cool slightly. Rind will remove easily.
Heat vegetable oil to 375 degrees F. Mix squash, eggs, flour, cinnamon and brown sugar. Form into patties. Fry 5 min. each side or until browned. Drain on paper towels.
Serve hot with butter. Syrup is also good with these.
