1 turkey (12 lb.)
Kosher salt
Pepper
1 large bunch fresh thyme
1 lemon, halved
1 Spanish onion, quartered
1 head of garlic, halved crosswise
4 tablespoons unsalted melted butter

Preheat oven 350 degrees F. Take giblets out and wash turkey. Place turkey in roasting pan liberally salt and pepper the cavity of the turkey.

Stuff the cavity with thyme, lemon, onion, and garlic. Brush outside of turkey with butter and sprinkle with salt and pepper. Tie legs together with string and tuck wing tips under the body of turkey.

Roast turkey for 2 1/2 hours basting with pan juice often.
