1/2 cup fresh lemon juice
Coarse-grain salt
3/4 tsp cumin
2 Tbsp olive oil
4 scallions, thinly sliced, white parts only
1 English cucumber, peeled, seeded, and thinly sliced
1 pint cherry tomatoes, halved
1 can (15 oz.) chick peas, drained and rinsed
1/2 cup roughly chopped flat leaf parsley and mint
1/2 bag salad greens
1/2 bag pre-washed baby spinach

In the bowl you'll serve the salad in, whisk together lemon juice, salt, cumin and olive oil.

Add scallions, cucumbers, tomatoes, chick peas, parley and mint.

Toss to combine all ingredients, taste and adjust seasonings. Serve immediately.
