Original recipe yields 1 serving
2 tsp vegetable oil
3 cloves garlic, minced
1 small onion, chopped
4 large mushrooms, finely chopped
4 cups cubed cooked turkey
1 can (19 ounce) black beans, drained & rinsed
1 1/2 cups shredded cheddar cheese, divided
1 1/2 cups shredded Monterey Jack cheese, divided
1 cup sour cream
8 large flour tortillas
3 cups salsa

Let's Make It
1. In skillet, heat oil over medium heat; cook garlic, onion & mushrooms until liquid is evaporated about 6 minutes. Remove from heat. Stir in turkey, beans, 1 cup each of the cheddar & Monterey Jack cheeses & sour cream.
2. Place 1 tortilla on work surface; spoon about 3/4 cup of the filling along center. Fold bottom edge over filling; fold in sides & roll up. Place in greased 13 x 9 glass baking dish. Repeat with remaining tortillas & filling. Top with salsa; cover with foil.
3. Bake in 375°F oven until knife inserted in center comes out hot, about 35 minutes. Uncover; sprinkle with remaining cheeses. Bake until cheese is melted, about 10 minutes.
