2 tablespoons butter or margarine
med 1/2 to 1 -large green pepper, diced small
1 small onion, diced small
1 package breakfast sausage, cut into small pieces
4 large eggs
1 package soft flour tortillas
1 package shredded cheddar cheese

In a med saucepan melt your butter and lightly saute your peppers and onions. While your veggies are cooking prepare your sausage according to manufacture’s directions. Once cooked, cut into small pieces.

When your veggies and sausage are done put them aside and scramble the eggs. As you are slowly cooking the eggs, add your veggies and sausage in. so they all mix together.

Once your filling is cooked, take one tortilla shell and sprinkle shredded cheese on top (to desired cheesiness). Spoon egg mixture over top, roll up, and enjoy. We also like to put picante sauce on.
