Original recipe yields 1 serving
1 cup sugar
3/4 cup vegetable oil
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 tsp baking soda
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp salt

1 pkg (12 oz.) vanilla baking chips
1/8 cup shortening

Combine sugar and oil. Mix well. Add egg, beating well. Add molasses and stir. Combine dry ingredients in a separate bowl. Gradually add to creamed mixture and mix well.

Roll cookie dough into 1 inch balls and roll in 1/2 cup sugar. Place 2 inches apart on ungreased baking sheet.

Bake at 350 degrees F for 11-12 minutes. Cookies will be lightly browned and look crackled. Do not overbake. Remove from pan and cool.

Melt chips with shortening in saucepan over low heat. Dip cookies halfway. Scrape bottom of cookie on edge of pan to remove excess chocolate. Place on waxed paper to harden.
