12 cups of water or water to cover ingredients (1 inch above ingredients)
2 cans red beans, drained
1 can pinto beans, drained
2 cans tomato paste or one large can tomato paste
1 can tomatoes, chopped
1 cup chicken broth

2 stalk s of celery cut, cut in 1-inch pieces
1 cup small pasta shells, cooked & drained
10 teaspoon s soy sauce
A pinch of fresh thyme, rosemary, chopped finely
2 cans button mushrooms, or 1/2 to 1 cup fresh mushrooms, sliced
1/2 cup black olives, pitted (optional)
1 chorizo sausage
1 1/2 Portuguese sausage or kielbasa, cut in 1-inch pieces
2 cups cooked potatoes, cubed

Let's Make It
In a large pot saute onions in olive oil. Add garlic and ham hocks. Cover with water and cook 45 minutes being careful to add water as it evaporates.
Add ingredients expect mushrooms, olives, sausage, and potatoes. Cook 1 hour medium low heat.
Then add remaining ingredients. Cook till ham hocks fall off bone and vegetables done. Remember to keep water in pot covering ingredients.
