Original recipe yields 1 serving
2 chicken breast halves with bones and skin
2 cups water
2/3 cup chopped sweet onions
3 fresh cloves garlic, whole
6 chicken bouillon cubes
2 sprigs celery leaf
1 jar (48 oz.) Randall's Northern Beans (do not drain)
2 package s (8 oz. each) Monterey Jack cheese
1 jar (12 ounces) mild salsa
2 teaspoon s cumin

In large pot, combine chicken breasts, water, onion, garlic, bouillon cubes, and celery. Bring to a boil and simmer until chicken is done (about 20 to 25 minutes).

Remove skin and bones from chicken and cut meat into 1/2 inch chunks. Return meat to broth along with beans, cheese, salsa and cumin.

Return to low heat, stirring frequently, until cheese is melted and chili is heated through.
