Sour Cream Chicken Enchiladas

Original recipe yields 1 serving
1 pint sour cream
2 cans cream of chicken soup
1 cup onion, chopped
2 cups diced chicken
1 can (7 oz.) diced chilies
1 dozen tortillas
1 1/2 lb Monterey Jack and cheddar cheese, grated

Let's Make It

Mix all ingredients except cheese and tortillas. Spread 1 Tbsp. of mixture on tortilla and sprinkle with cheese.

Roll up and put in shallow, greased pan. Spread remaining mixture over rolled tortillas.

Bake at 350 degrees F for 40 minutes. Remove and sprinkle more cheese over top. Return to oven until cheese is melted.
