Peel sweet potatoes, cut in half then quarter lengthwise. Place potatoes in large stockpot, spread remaining ingredients evenly over potatoes.
Cover and cook on medium heat until potatoes are tender, approximately 30 minutes.
Remove lid, stir to relocate potatoes from top to bottom and reduce heat to low. Continue cooking uncovered on low until done, about 15 minutes.
