Grate the cheese very finely. Dice the onion and 1/2 the jar of olives very finely. Place the diced onion and the diced olives in with the cheese and mayonnaise. Mix up. You can add additional to your taste. You should really not see the mayonnaise after it is mixed in but the mix should be lightly creamy to taste.
Cut celery stalks into 3-4 inch pieces and with a fork fill to just over the edge until it looks fluffy and attractive. Just remember you can add more mayo, onion and olives to taste, but once in there you can't take them out.
