Original recipe yields 1 serving
1 med onion
1 green pepper OR 1/2 green, 1/2 red
6-8 eggs, slightly beaten
Grated cheese (as desired)
1 small pkg. sausage
1 pkg soft taco shell (lg. or small rd)
Sour cream
Salsa

Prepare the onion, peppers, eggs, and grated cheese. In a large fry pan, Pam spray, fry sausage, half way then add veggies, then the beaten eggs, stirring well, then the grated cheese. Stir till all cooked pretty well. Set aside.

Put a clean fry pan to warm up the taco shells; do not add any oil, just flip the shells over couple times till warmed up.

Then spoon on some sour cream and salsa on shell then some of the sausage mixture. Roll, turn one edge in and continue to roll, enjoy!!
