Original recipe yields 1 serving
Cookies
1 cup margarine/butter
1 cup sugar
2 eggs
1 can (15 oz.) packed pumpkin, *not pumpkin pie filling
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup dried cranberries, eg:*Ocean Spray Craisins
1/2 cup chopped walnuts
Pumpkin Frosting
3 Tbsp butter/margarine
4 Tbsp milk
1/2 cup brown sugar
1 cup powdered sugar
3/4 tsp vanilla

Begin the cooked portion of the frosting now so that it can cool. Bring shortening, milk, and brown sugar to a low boil for 1 minute. After it cools, add powdered sugar, and vanilla.

Preheat oven to 350 degrees F, and prepare cookie sheets. Cream shortening and sugar. Stir in eggs, pumpkin, and vanilla. Set aside. Sift dry ingredients, and stir in creamed mixture. Add cranberries and walnuts.

Drop by teaspoonful onto greased cookie sheets.

Bake for 12-15 minutes. Cool on racks, and ice with Pumpkin Frosting while still warm. Icing will drip off cookies, so be sure to put wax paper under cooling racks.
