In a large skillet sprayed with butter-flavored cooking spray, saute celery, onion and almonds until vegetables are tender, about 10 minutes.
Stir in mushrooms, mushroom soup, and soy sauce. Add tuna and mix well to combine. Lower heat and simmer 5 minutes, stirring occasionally.
For each serving place 1/2 cup rice on each plate and about 1/2 cup tuna mixture over top.
