Taco Soup

Original recipe yields 1 serving
2 lb ground beef (can use ground turkey instead)
1 large onion, finely chopped
2 pkg taco mix
2 cans pinto beans
2 cans kernel corn
1 can (4 oz.) tomato sauce
1 can chopped tomatoes (hot/mild Ro*Tel tomatoes is better)
1 can beef broth
1 large bag corn chips
Sour cream
Grated cheese
Chives (optional)

Cook ground meat down with onions. Season to taste. Drain grease.

Add taco mix, beans, corn, tomato sauce, chopped tomatoes, and the beef broth. Let simmer for 30 minutes.

Place corn chips in bowls, and pour soup over them. Top off with sour cream and cheese (can add chives).
