Place chicken in large stock pot and cover with water. Heat to boiling, reduce heat to medium low and cook for 50 minutes.
Dice carrots, celery and onions into large pieces. Remove chicken from water and cut into bite sized pieces. Return chicken to pot along with vegetables and seasonings.
Simmer for 2 hours. Bring soup back to boiling and add noodles last 10 minutes.
