Original recipe yields 1 serving
1 1/2 cups brown sugar
1/2 cup shortening
1 egg, well beaten
1 tsp baking soda
2 cups flour
1 cup buttermilk
1/2 tsp vanilla
1 1/2 cups raw, diced rhubarb
Topping
1/2 cup brown sugar
1 tsp cinnamon

Let's Make It

Cream together brown sugar and shortening. Add egg. Combine dry ingredients and add to creamed mixture alternately with buttermilk. Add vanilla and rhubarb--mix well.

Pour mixture into greased 9 inch pan. Combine topping ingredients and sprinkle on batter.

Bake at 350 degrees F for 45 minutes or until center is done.
