1/2 pound pork
Salt and black pepper
1 onion
Garlic
1 green sweet pepper
Olive oil
2 1/2 cups rice
1 can coconut milk
1 cup water
1 can sweet corn
1 can pigeon peas
Green onions
1 habanero pepper (optional)

Cut and wash pork. Season the pork with salt, black pepper, onions and garlic. Cut green sweet peppers in chunks.

In pot put olive oil to get hot. When hot add pork to pot. Let cook for 5 minutes. Add rice, coconut milk, water, corn, peas, and green sweet pepper. Stir and cover pot on slow heat.

When pork and rice are fully cooked and reach desired tenderness turn off stove. Add the green onion to the pot. If desired you can add a habanero pepper to the dish.
