Original recipe yields 1 serving
1 lb hamburger
1 can tomato sauce, divided
1 cup chopped onion
1 tsp garlic
3 eggs, slightly beaten
2 slices bread
Butter
medium 4 to 5 sized potatoes (pealed and quartered)

Preheat oven to 350°F. Combine hamburger, 3/4 of tomato sauce, onion, garlic and eggs. Break bread into pieces and stir in until blended. Place in baking pan and arrange as a loaf. Bake for 30 minutes.

Lightly butter quartered potatoes and place around the loaf and bake for additional 20 minutes.

Turn potatoes and butter lightly again. Add the rest of the tomato sauce to top of meatloaf and bake additional 10 to 15 minutes until potatoes are golden brown.
