Slice potatoes in half lengthwise; scoop out centers, leaving 1/8 inch shell. Mash potatoes. Combine with juice, margarine, sugar and ginger; beat until fluffy. Spoon into shells.
Combine marshmallows, coconut and margarine: mix well. Spoon onto potatoes.
Bake at 350°F 20-25 minutes.
