Boil together potatoes, onions, celery and salt and pepper until tender.
Pour out about 1/2 of the water; add cilantro, sausage, butter and milk. Boil slowly to allow flavors to mix, approx. 45 minutes.
Top with shredded parmesan cheese. This soup is soooo good. The cilantro is what makes it.
