Cut a horizontal slit through the bread to form a small pocket. Combine powdered sugar and cream cheese; stir well. Spread mixture evenly into pockets of bread. Place in shallow baking dishes.
Combine sugar, milk, vanilla (or almond) extract, and eggs in a bowl; beat well with wire whisk. Pour milk mixture over bread slices.
Cover and chill until liquid is absorbed.
Cook on medium hot griddle 3 minutes on each side or until browned.
