1 med onion, sliced thin
1 med head of red cabbage, shredded
1 cup water
1/2 cup red wine vinegar
1/3 cup sugar
1 1/2 tsp salt
1/8 tsp pepper
1 bay leaf

Saute apples and onions in butter until tender in med. saucepot.

Add remaining ingredients together in pot with apples and onions.

Simmer 40 minutes or until tender. Remove and discard bay leaf.
