Cranberry Bread

Original recipe yields 1 serving
2 cups all-purpose flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup orange juice
1 Tbsp grated orange peel
2 Tbsp shortening
1 egg, well beaten
1 1/2 cups fresh or frozen cranberries, coarsely chopped

Preheat oven to 350°F. In a bowl mix together dry ingredients. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries.

Turn into a greased 9x5 inch loaf pan.

Bake for 55 minutes or until toothpick inserted in center comes out clean. Cool on a rack 15 minutes; remove from pan.
