Original recipe yields 1 serving
8 Roma tomatoes (take out seeds)
1 large white onion
1 bunch scallions
2 green bell peppers
1 yellow bell pepper
1 can (15 oz.) black beans
2 cans (15 oz. each) black eye peas
1 small can Shoepeg style corn
1 bottle (8 oz.) fat free Italian dressing
Fresh cilantro to taste

Let's Make It

Wash all fresh veggies. Seed peppers and tomatoes. Drain and rinse beans, peas, and corn. Set aside.

Finely chop all fresh veggies so that no piece is much bigger than a piece of the shoepeg corn. Add beans, peas, and corn to chopped veggies. Mix all together with Italian dressing. Add cilantro to taste.

Serve as a dip with tortilla chips or mix with cold salad Rotini for great pasta salad.
