Preheat oven to 350°F. Spread almonds on baking pan. Bake 8 minutes, until lightly toasted. Cool 30 minutes.
Reduce oven to 300°F. Grease two baking sheets. In large bowl whisk egg white until foamy. Whisk in sugars, vanilla, cinnamon, salt. Stir in almonds until coated. Spread out on both pans. Bake 10 minutes. Remove from oven and flip. Return to oven for another 10 minutes until nuts are pale golden brown and appear dry.
Remove from oven and let sit for 5 minutes and move them to wax paper to cool.
