Wash potatoes and leave peel on. Place in large pot of boiling water and cook for 1 hour or until potatoes are soft. When the potatoes are done drain water and place back in pot, mash potatoes by hand.
In a medium skillet place shallots in with 1 tsp. butter and saute. Add to mashed potatoes.
Add the remaining ingredients, stir, and enjoy!
